Thanksgiving Soup for Leftover Turkey

Looking for a soup recipe to use for your leftover Thanksgiving day turkey?  Come on into our shop kitchen to learn how to make our favorite leftover soup.
 
This soup is incredibly quick and easy to make.   From start to finish it only takes about 15 minutes.
 
First chop into bite size pieces about four cups of leftover turkey - white or dark meat - it really does not matter.
How long can you store cooked turkey in the refridgerator? The American Dietetic Association guideline states 4 days.
 
 
Then combine the following ingredients with the turkey in a soup pot:
  • 8 ounces of salsa.  We use Tostitos All Natural Salsa - Mild.
  • 16 ounces of chicken broth.
  • Misc herbs - We use bay leaf, thyme and parsley added to our personal taste.
  • 1 cup of some sort of pasta such as sea shells.  Leftover mashed potatoes also taste great in this soup.
  • Salt and pepper to taste

Heat until your pasta is cooked, garnish with sour cream and tortilla chips.




























This soup goes well with a Waldorf Salad.
 
Combine the following ingredients:
  • 1/2 cup mayonnaise
  • 1/4 plain yogurt
  • 2 teaspoons of Dijon mustard
  • Juice from 1/2  small lemon
  • 1 cup chopped celery
  • 1/2 cup walnut pieces
  • 2 chopped green apples.  I buy the green apples in the grocery store that are already cored and sliced and cut them into smaller pieces.
Chill for about 1 hour.   Then serve on a bed of your favorite type of lettuce.  I usually buy a bag of the pre-washed lettuce in the product department of the grocery store.
